Donburi (literally meaning rice bowl dish) is a great, healthy way to fuel your body with some quality energy any day of the week at lunch or dinner time. Give this teriyaki chicken donburi a go. You can even double-up and take some for lunch to work the following day.
Ingredients (makes two portions)
225g chopped chicken breast
280g brown rice
150g beansprouts
2 spring onions, finely chopped
1 tablespoon coconut oil
50g teriyaki sauce
80g broccoli
80g shredded carrot
Sprinkle of golden linseed

This one is very easy to make! Begin by boiling your rice. Meanwhile heat some coconut oil in a large frying pan or wok. Add your beansprouts, shredded carrots and spring onions and allow to soften for 5-10 minutes. Next add your chicken breast and teriyaki sauce and give it a good stir for the next 15 minutes or until chicken is cooked through. Lastly, steam your brocoli. To serve sprinkle with golden linseed and garnish with some raw spring onions.
