Protein Frenzy Frittata


A frittata is an egg-based Italian dish, similar to a quiche without the crust. It works perfectly as a meal any time of the day or even stored in the fridge as a healthy snack for when you get peckish. The ingredients shown make a large frittata that can serve two people or divide it up into smaller slices for your snacks. Feel free to experiment with the fillings too. 10 eggs
240g sliced chicken breast
Chopped red onions
Handful of cherry tomatoes
Handful of chestnut mushrooms
Tablespoon of olive oil
Mixed side salad, with light salad cream (optional)

This frittata is packed with protein
To make your frittata, heat a tablespoon of olive oil in a large frying pan on medium heat. Add your frittata fillings including the chicken, red onion, cherry tomatoes and chestnut mushrooms and cook briefly to release the flavours. In a medium bowl, whisk together your eggs before pouring the mix over your ingredients in the frying pan. Cook without stirring, until the edges appear firm. Finish the dish by placing your frying pan under a medium heat grill for 15-20 minutes. Serve and enjoy.
