Paleo Chicken Nuggets


Try these paleo inspired chicken nuggets that could have easily fuelled the leanest caveman 2.6 million years ago. These tasty nuggets are packed with protein and good fats, but lack the carbs, sodium and preservatives commercial chicken nuggets often contain. Great if you want to build muscle, burn fat or just fuel a healthy body.

Paleo Chicken Nuggets

Ingredients (makes three servings)
375g diced chicken breast
100g ground almond
50g crushed pecans
2 egg whites
220g tenderstem broccoli
1/2 teaspoon rosemary
1/2 teaspoon thyme

Begin by placing your egg whites in a bowl, and your dry ingredients in another separate bowl. Individually take a piece of diced chicken, dip it in the egg whites, the dip it into the dry ingredients. Ensure you coat the chicken well and place it on a baking tray (I used a couple of sprays of frylight, to prevent the nuggets from sticking during cooking). Place the nuggets in a preheated oven at 375 degrees F for 20-25 minutes. Steam the broccoli until tender.
