Halloween Stuffed Peppers


Have some frighteningly good fun with your food this Halloween and conjure up these spooky stuffed peppers. Perfect for healthy nibbles at a party or just a lean, protein-packed dinner.


Ingredients (makes one serving/two stuffed peppers)
2 large orange bell peppers
125g lean beef mince
50g brown rice
1/4 white onion
50g red kidney beans
50g chopped tomatoes
1 tablespoon tomato purée
1 tablespoon lazy garlic
1 tablespoon ground cumin
1 tablespoon smoked paprika
Small handful chopped coriander
1 teaspoon coconut oil

Begin by boiling your rice and chopping your onion and coriander. It’s also wise to start cutting the lids, removing the insides and carving your faces with a small sharp knife into your bell peppers. Take your time as it’s easy to mess this up, believe me! Next grab a large pan and heat your coconut oil over a medium heat. Add your mince and cook until brown. You can now throw in your rice, chopped tomatoes, tomato purée, onions, red kidney beans, coriander and seasonings. Continue to stir and cook for another five minutes. Lastly you just need to spoon out your meat mix and stuff into your peppers. Pop the lids back on and they’ll be ready to devour.
