Smokey flavours, high protein, quality carbs from quinoa and ready in minutes! What’s not to like about this tasty stir-fry?
Ingredients (to make one serving)
1 chicken breast, chopped
Quarter of a red pepper, chopped
Quarter of a yellow pepper, chopped
60g of quinoa
30g feta cheese
1 tablespoon smoked paprika
1 teaspoon of coconut oil
Small handful of chopped parsley leaves
Wedge of fresh lemon

Begin by boiling your quinoa until soft, this usually takes 10-15 minutes. Meanwhile heat your coconut oil in a large pan, and add your chopped chicken breast to cook until all pink has gone and juices run clear. Next, throw in your pre-boiled quinoa, red and yellow peppers and smoked paprika. Stir regularly until the paprika is evenly distributed and the quinoa is warm though. Spoon out onto a plate and add your crumbled feta cheese, parsley and finish with a squeeze of lemon. Enjoy!
