Thai Green Curry

Thai green curry

Ingredients (makes two servings)
300g brown rice
125g diced chicken breast
120g bamboo shoots
50g shiitake mushrooms
75g mangetout
50g Thai green curry paste
300ml light coconut milk
1 teaspoon coconut oil
Squeeze of fresh lime

The great thing about Thai green curry, and many other Thai dishes for that fact, is that they are all fairly simple to make and are always bursting with flavour. Begin by boiling your rice, whilst this is boiling you can start warming the coconut oil in a large pan on a medium heat. Once warm you can add your diced chicken breast to begin cooking. Once cooked through you can then throw in the bamboo shoots, mushrooms and mangetout. For another few minutes stir thoroughly. Last but not least, you can add in the paste, coconut milk and squeeze of fresh lime. Again stir thoroughly. By this stage your rice should be boiled so it’s time to start playing up. Don’t forget to pour the sauce from the pan over the meal – this is where the flavour is!
