Ingredients (makes one serving)
100ml coconut milk
90g brown shrimp
1 tablespoon olive oil
Handful of broccoli florets
2 tablespoons mild curry powder

To make, begin by heating your olive oil in a frying pan over medium heat. Mix in the curry powder, coconut milk and broccoli florets and stir throughly. Meanwhile boil up your quinoa. After 10-15 minutes of cooking, your curry mix will be ready for the shrimp. Make sure this is the last ingredient added as overcooked shrimp is very rubbery and can ruin the dish. After a further five minutes of cooking your curried shrimp will be heated through and ready to eat. Serve immediately.
