400g cod fillet
100g Ainsley Harriott – spice sensation couscous
15g chopped jalapeño peppers
Slice of lemon
140ml Unsalted vegetable stock for cooking

Place all the ingredients in a tin foil parcel, pour the vegetable stock over the couscous and bake in a pre-heated oven for 20 minutes. The ingredients listed make a big enough meal that can easily be split into 2 smaller meals.
