Baked Eggocado

Eggs, a super high quality protein source. Avocados are well renowned for their heart-healthy monounsaturated fatty acids. They both make a great addition to any meal, but how’s this for an interesting twist – Eggocado!

Ingredients
1 large avocado
2 small eggs
Sprinkle of black pepper

Simply cut the avocado in half, remove the stone and spoon out a little more avocado to fit your egg. Crack a raw egg into the hole and bake in a pre-heated oven at 425 degrees for 15-20 mins. Finish with a sprinkling of black pepper. Why not try adding a few rashers of grilled bacon to make a high protein, low carb breakfast.
